hi!!! it's been sooo long since i've last updated the blog! sorry for the lull there, there was just so much going on and i could never really find the time to sit down and do a blog post. but here i am, back and with a new recipe for you all. i know thanksgiving hasn't even come yet, but being on the quarter system, my christmas break practically starts right after thanksgiving. that said, if i waited till after thanksgiving to start celebrating christmas, i wouldn't get to do all the fun festive activities i want to do with all my friends in san diego. sooo, christmas is practically in full swing in my apartment currently.
one of the first things my roomie and i did together was bake. because i mean it's not the holidays without some baking. we decided on cupcakes because why not, and went with a festive peppermint mocha recipe. quick disclaimer: we weren't able to find a couple of the ingredients in the recipe and tried replacing them with similar items and it didn't work out too well. i mean they were still freaking delicious, just not exactly what they were meant to be. anyways, let's get on with the recipe!

you'll need, for the cupcakes: (makes 12)
to make:
- 1/2 cup unsalted butter
- 2 ounces semi-sweet baking chocolate
- 1 tablespoon instant coffee
- 1/2 cup unsweetened cocoa powder
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/2 cup buttermilk
to make:
- preheat your oven to 350F degrees. line a cupcake tray with liners.
- melt the butter and chocolate in the microwave. microwave it for 30 seconds at a time and stir in between. stir to combine and add the instant coffee.
- mix the cocoa powder, flour, baking soda, baking powder, and salt. in a separate bowl, mix the eggs, sugar, brown sugar, vanilla extract, and peppermint extract. add the butter and chocolate and mix. then combine in half of the flour and half of the buttermilk. repeat until it's all combined, but don't overmix.
- pour the batter into the liners; bake for 18 minutes. let them cool before you frost them.
you'll need, for the frosting:
to make:
- 1 cup unsalted butter, softened to room temperature
- 3-4 cups confectioners' sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon peppermint extract
to make:
- beat butter on medium with an electric mixer for about 3 minutes. add in the powdered sugar, cream, vanilla extract, and peppermint extract while the mixer is running. run it on high speed for 3 minutes.
frost the cupcakes and decorate them however you want! i went with some pretty toppers, but you can definitely go for a more classic christmas look. :)
