it's blogmas day 5 (and tomorrow is christmas eve)!!! now that the week is officially over, christmas is soo close. whether you still have some last minute presents to buy or errands to run, we're definitley in the homestretch. while the build-up to christmas is probably my favorite time of the year, christmas morning is obviously magical in its own way. for my family it's usually a chill day spent at home. we wake up, open presents, then make brunch together and just enjoy the day. one of my fave parts of the morning is having brunch together, so i wanted to share a recipe i just conjured up that i think would be absolutely perfect for christmas morning, eggnog pancakes! everybody loves pancakes, and i think even people that don't like eggnog would like these. give them a try this christmas, and maybe even start a new holiday tradition.
you'll need: (makes 8)
to make:
- 1 and 1/2 cups all purpose flour
- 3 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/4 cups eggnog
- 3 tablespoons melted butter
- 1/2 cup milk
- 1/2 teaspoon cinnamon
to make:
- sift dry ingredients together.
- add the egg and mix.
- add butter to eggnog, milk, and vanilla.
- whisk dry and wet ingredients together.
- oil a pan, pour batter, and cook until both sides are browned.
- garnish, and enjoy a festive breafast!
i think this is the perfect thing to make christmas morning. there's so many festive desert, drink, etc. recipes, but there aren't many breakfast ones. i hope this helps make your christmas morning even more festive! xo shawndiz
